Croquettes (GF)

These gluten free croquettes are a real treat! Fill them with cheese, ham or any other filling.

Ingredients
  

  • 3.5 lbs Potatoes peeled and quartered
  • 2 oz Butter
  • to taste Salt
  • to taste white pepper
  • to taste Nutmeg
  • 5 Egg yolks

Breading Procedure

  • 2 cups Gluten free flour approximate
  • 2 Eggs
  • 3 cups Gluten free bread crumbs approximate

Instructions
 

  • Steam the potatoes until tender. You can also simmer in salted water until tender, drain in colander and let dry in oven for a few minutes. (Steaming is preferred, potatoes will be drier).
    2. Pass the potatoes through a food mill or ricer
    3. Add butter and season with salt, white pepper, and nutmeg 
    4. Put mixture in a medium pot, set over medium heat and stir until mixture is dried out or add cornstarch or potato starch to absorb excess moisture, if needed. Note: mixture needs to be dry for croquettes to hold shape. 
    5. Remove from stove, add eggs yolks and combine mixture well. 
    6. Spread mixture in a casserole dish with airtight lid and place in refrigerator. Allow mixture to cool. 
    7. Dust hands with flour and shape potatoes by hand into cylinders the shape of corks, about 2 inches long and 1 1/2 oz each. 
    8. Set up a breading station: plate with flour, plate with eggs, plate with bread crumbs. 
    9. Pass croquettes through breading station: rolling through flour, then eggs, then bread crumbs. 
    10. When ready to eat, fry croquettes in deep fry until golden brown. Drain well and serve. 

Notes

This is a wonderful recipe to make ahead. There are two steps that you can take a pause. First, in the refrigeration process after the mixture has been made. I let this batch sit overnight. Second, once you have created the croquettes and passed them through the breading process, you can freeze. They freeze really well. When you are ready to serve, you can take them right out of the freezer and fry them. 
You can also add ingredients to the croquettes. I added about 1/4 cup parmesan cheese and powdered oregano. You can also add chopped ham, finely chopped nuts or any other dry ingredient.
