Crustless French Quiche

Ingredients
  

  • 1 tsp olive oil
  • 1 med onion, sliced
  • 1 cup mushrooms
  • 3 handful spinach
  • 2 cloves garlic, minced
  • 1 1/2 cup milk (almond milk can substitute)
  • 5 each eggs
  • 1/4 cup parmesan cheese, grated
  • 1 tsp fresh basil, minced (or 2 tsp dried basil)
  • 1/2 tsp black pepper
  • 1/8 tsp ground nutmeg

Instructions
 

  • 1. Preheat oven to 350F. Lightly spray 9-inch pie pan with nonstick cooking spray.
    2. Heat oil in medium skillet over med-high heat. Add onion slices and cook until browned (caramelized), add mushrooms and garlic, cook for about one minute then add spinach; cook for 2-3 minutes. 
    3. Spread mixture evenly on bottom of pie pan.
    4. In a separate medium bowl, combine milk, eggs, cheese, basil, pepper and nutmeg. Pour over mixture.
    5. Bake 50 minutes or until inserted knife comes out clean.  

Notes

Variation: you can use other vegetables or diced ham, turkey or cooked bacon in skillet; then follow rest of receipt.
